Cucumber and Pineapple Juice Drink

I did not anticipate writing a summer drink post and what is actually the hottest day of the year in the UK so far. But the stars have aligned and here we are! Although by the time this is posted I bet it’s raining, British weather likes to keep us on our toes. Anyway, as I said – I’m writing this on the hottest day of the year, and where do I chose to be? Sweating to the point of delusion on a coach, currently gridlocked on the M6 with hallucinations of calypos and infinity pools. This is my torture for the next five hours. I’d love for someone to come save me with one of these cucumber and pineapple quenchers right now!

When it is this hot, and I mean really bloody hot, I sort of lose my appetite a bit. Cucumber and pineapple juice is the perfect antidote to this, I still get to play around with British seasonal produce but throwing it in a blender is much easier than cooking or assembling. Plus I find cucumber is a bit lacklustre when it comes down to thinking of a dish with it as the star of the show, correct me if I’m wrong though. The pineapple was absolutely necessary.

I understand you might not want any vegetable in drink form. Just one bad experience with greens in there is definitely enough to put you off for life. I know, I’ve been there. The cucumber isn’t really there for the ‘green’ healthy juice effect, that never played a part in my reasoning. It simply makes a nice balance to the tangy pineapple with sour lemon and the result is very refreshing. People have been putting cucumber and mint in their drinks for some time now so I know I’m not completely off the mark with this!Cucumber and Pineapple Smoothie

Cucumber and pineapple is my new favourite summer combination. Enjoy a glass with me, we need something to stop us moaning about the heat!

Ingredients

2 Servings
  • 250g fresh pineapple
  • 1/3 of a cucumber, peeled
  • juice of 1/2 a lemon
  • 250ml coconut water
  • ice

Method

  • Roughly chop the pineapple and cucumber before adding to your blender.
  • Blitz with everything else, adding more coconut water if required.
  • Drink right away!
