Sriracha Scotch Eggs

You know those words you just can’t spell no matter how many times you see or write them? Sriracha is one of those words for me. It’s ridiculous really because Sriracha sauce is one of my true loves. It’s a cupboard staple. The spelling will not sink in and every time I have to type the word in this blog post I’ll have to check it against Google. Sriracha Sriracha Sriracha. The practice isn’t helping.

Anyway, Sriracha scotch eggs! An idea that announced itself rather randomly one evening, I’ve had it stored in my phone notes ever since. When Saghar from one of my favourite food blogs Lab Noon, got in touch over a big blogger collaboration to involve something you would take to a picnic, I knew it was the perfect time to give these a go.

A bunch of us bloggers are taking the internet by storm today to deliver all kinds of picnic recipes, some savoury, some sweet. I can’t wait to see what everyone is bringing, I’ll include a list of favourites at the end of the post! It’s not just about the recipes though, Saghar made a good point about using our online presence to send out positive messages. I could think of no greater time to be doing so. I am joining the Virtual Midsummer Potluck for Peace because I want all cultural backgrounds to be celebrated, not fought or discriminated against. I want community. Food is such a strong symbol of that.

The eagle eyed of you might notice there are no scotch eggs to be seen on that picnic spread. Well friends, that’s what happens when you try to plan ahead for a picnic in England. Not even the weatherman can help us on that front, England does its own thing as and when it pleases. I had to shoot the scotch eggs indoors on planned picnic day (it was raining). The sun did grace us with its presence later the same week. Sriracha Scotch Eggs

Recipe for Sriracha Scotch Eggs



4 Servings
  • 5 eggs, 1 beaten
  • 125g panko crumbs
  • 100g plain flour
  • sunflower oil, for frying
  • 6 good-quality sausages, skinned
  • 2 tbsp Sriracha sauce, plus extra to serve
  • 1/2 pack coriander, finely chopped


  1. Soft or hard boil four of the eggs as you prefer. Scoop out and quickly plunge into iced water to stop them cooking any further.
  2. Combine the sausage meat, Sriracha sauce, coriander and plenty of seasoning.
  3. Peel the cooled eggs and roll in the flour. Pat out a quarter of the mince flat onto the palm of your hand. Place a peeled egg onto the mince and wrap the mixture around, making sure there are no gaps.
  4. Roll the scotch egg into the beaten egg and then into the breadcrumbs to coat. Repeat with the remaining eggs.
  5. Cover with cling film and leave in the fridge to firm up for 4 - 6 hours.
  6. Pour the oil into a deep heavy-based saucepan, up to a third full but no more.
  7. Use a cooking thermometer to check the temperature of the oil, needs to reach 160C before frying. Test with some of the remaining panko crumbs, they should turn golden after 10 seconds in the hot oil.
  8. Cook each egg for 8 - 10 minutes until golden brown and crispy. Drain on kitchen paper.
  9. Serve halved with extra sriracha sauce, if you fancy!
